Day 11: My Favorite Recipe

This is my good friend Courtney's famous mini cherry cheesecake recipe. I made them last night and they are very easy, beautiful and delicous!

Mini Cherry Cheesecakes

-18 foil cupcake liners

-3/4 cup sugar

-18 vanilla wafers

-2 packages cream cheese, softened

-2 eggs

-1 tbsp lemon juice

-1 tsp vanilla

Preheat oven to 375. Line a cupcake pan with foil liners. Place a Nilla Wafer in each one. (Note: the wafer will not fill the entire liner, and that's okay) Mix all ingredients in a large bowl and beat on medium for a few minutes with an electric mixer until light and fluffy. Pour into foil liners until about 3/4 full.

Bake for 12-15 minutes, keeping a very close eye on them! You do NOT want them to get even the least bit brown. Remove from oven and let cool. (I usually stick them in the fridge shortly after) Chill for a couple of hours or overnight.

Top with each with a spoonful of cherries. I usually do three. Go light on the syrup.

Stick them back in the fridge until ready to serve. Cheesecake always tastes best cold!

Here's a list of the products I love and why (I included links):

Hope in a Jar: This is the best moisturizer I've ever used. It's a little pricey, but it feels amazing on your skin. It also has the perfect amount of lactic acid in it to help control breakouts.
Smashbox Blush in Passion: I love this blush and especially like the handy little mirror that slides out.
Sephora Collection Colorful Eye Shadow Palette: These colors compliment almost everyone's skin tones. I use the light colors most days, but it's nice to have the darker colors if I want to play up my eye makeup some days.
Benefit Bad Gal Lash: I've used this mascara for years and it's still my favorite. It's not waterproof, but water resistant, so you really get the best of both worlds.
Lorac Lip Stain: Nobody likes reapplying lipstick every hour, especially if you're attending some kind of fancy party or event. Try this lip stain! It comes in great colors and has a long-lasting gloss that accompanies it.
Benefit One Hot Minute: This is the greatest bronzer. It comes as a loose powder and has just the right amount of sparkle.
Estee Lauder Nutritious Vita-Mineral Foundation: I hate thick foundation, but I also want coverage. This is light and smells great. It also moisturizes without clogging pores.
Almay Liquid Eye Liner: This is the greatest eye liner and the best part is that it's only $5! I've used the expensive stuff, but like this so much more. It stays on all day and looks great.
Loreal Translucent Powder: Another drug store favorite. This powder takes away the shine, but isn't heavy or sparkly.
Tweezerman Tweezers: These tweezers are the best. I've tried many and none beat these guys.

Day 3: Most Embarrassing Moment

I think it’s time that I share this story and it’s definitely my most embarrassing moment.

I won’t try to make any excuses for myself, because it was just a really dumb moment that I hope to never repeat again.

It all started on a pretty typical Friday night. Then I get a call from my brother who was stuck in Seattle with no gas or money, so I went to the gas station by my house to meet him. Since I was waiting for him anyway, I decided to get myself some gas too. In the meantime, I completely forgot I was getting gas and started to drive away WITH the gas pump nozzle still attached to my car. I only drove a few feet when a homeless man stopped me and asked if I was crazy. Following this lovely conversation, I jumped out of my car, freaked out and drew a ton of unwanted attention to myself. Needless to say, it didn’t end well and we had to pay to replace the whole pump. I still cannot go to that gas station without visions of this horrendous incident coming into my mind.

So, there you have it; my most embarrassing moment.

Why I Believe

Lately I've been reflecting on why I believe what I do and how I know what I know. If you're reading my blog, you probably know me well enough to know that I belong to The Church of Jesus Christ of Latter-day Saints, or in other words, I'm a Mormon.

I've been a part of my church since I was born and my parents (and their parents) are all Mormon. Even though I was born into a Mormon family, I made my own choice to believe it’s true. I've always known that I'm a daughter of my Heavenly Father and that Jesus Christ is my Savior, my Redeemer and my elder brother. I know that Christ died for me so that I can live with Him again after this life. I know that God loves me and knows me and has a perfectly mapped out plan for my life. I know that through the spirit, the Lord is always with me to guide, help and comfort me. I also know that families can be together forever. These truths make my life worth living and make me the person I am today.

I love being Mormon and I love how happy I feel when I do what I know is right. To me, there's no greater joy than being able to help someone in need.

So why do I believe? I believe because I KNOW that God is real and that He loves me and He loves every person that lives and that has ever lived on this Earth. He is aware of all our needs and all He wants is for us to be happy. Sure, bad things happen. We all face trials in life. I don't think God likes to see us suffer, but He knows what's best for us and knows what will help make us stronger and, in the end, happier.

So many people spend their whole lives looking for happiness and waiting for it to the be thrust upon them. I feel lucky to be blessed with everlasting comfort, joy and happiness. This peace comes through believing in Christ and believing that there's a bigger plan for me and for life.

I love these videos that were made by my church. They each do a great job explaining some of the things I believe and some of the things that are dearest to me.

Snow day or snow week?

It's a well known fact that Seattle doesn't handle snow very well. It's also a known fact that Seattle sees at least a little bit of snow every Winter. This year I thought we might miss the snow, but Mother Nature surprised us again!

Last weekend I went home to Sammamish to go to my little sister Lindsey's school play. I ended up sleeping over and getting "snowed in" until the next evening. But then all the snow melted and I thought that was over. Foiled again! Woke up Wednesday morning to several inches of snow, which then turned to ice and then more snow. Needless to say, my snow day turned into a snow week! The entire city shut down and I worked from home for a few days. I didn't drive from Tuesday evening until yesterday! I also got quite the case of cabin fever.

Saying Goodbye to 2011

2011 was a great year that brought many new life experiences. I'm looking forward to 2012 and the new adventures that lie ahead of me.

My last week of 2011 was a great one.

I saw Roger and Hammerstein's Cinderella at the Fifth Avenue theater downtown, had a good friend come to visit, saw a great movie, went to an awesome NYE party, to a dance at Seattle Center and watched the fireworks at the Space Needle.

Christmas in the Northwest

I'm a little behind on blogging, but I wanted to share some pictures from Christmas.
This year, we stayed around Seattle and went on several mini trips.
The day before Christmas Eve we went to a little German Christmas town called Leavenworth. We went to lots of little shops, played in the snow and went on a sleigh ride! It was freezing, but magical and festive.

On Christmas Eve we went to brunch at the Space Needle and spent the rest of the day at home together. Later that night we opened our presents. Then on Christmas morning we had a nice breakfast, went to church and had a nice dinner together.

I made necklaces for my sisters for Christmas!

This Christmas I remembered the importance of family. I'm so grateful for my family and all they do for me. I feel so lucky to live close to them. Of course, most importantly, I had time to think about Christ and to remember that He's the reason for the season. I know that He is my Savior and that He came to Earth and died so that I can be saved and can live with Him again one day. As we begin this new year, I am going to try harder to remember all the blessings I've been given and to keep Christ at the center of my life always.

It's that time of year

Isn't Seattle pretty at Christmas time? I think everything is prettier at Christmas. Also people are kinder, more joyful and giving, and time seems to fly by!

One of my favorite things about Christmas is the music. These are my two favorite songs right now:

This year I decided to make a lot of my gifts, which has proven to be quite the time commitment.
Hopefully my hard work will pay off in the end and everyone will be happy! I'm also hoping this inspires me to actually put some merchandise in my currently empty Etsy shop.

Yesterday, we had roommate Christmas which included a nice lunch (prepared by yours truly) and a gift exchange. Sadly, we didn't take any pictures, but I do have a picture of the cake I made!

I could write a million reasons why I love Christmas, but the most important one, is because we get to celebrate the birth of our Savior. Jesus Christ is the reason for the season.

Last Sunday, I got the chance to be reminded of this fact by some of the leaders of my church during our annual Christmas devotional. During this meeting, President Uchtdorf said the following:

“It is usually something small—we read a verse of scripture, we hear a sacred carol and really listen to its words, or we witness a sincere expression of love. In one way or another, the Spirit touches our hearts, and we see that Christmas, in its essence, is much more sturdy and enduring than the many minor things of life [that] we too often use to adorn it. We realize in these precious moments what we feel and know in our heart—that Christmas is about the Christ.”

Third Time’s the Charm!

My good friend Katie got married this weekend, which marked the third time I’ve been a bridesmaid (all within the last year). I may be well on my way to 27 Dresses. Ha ha.

But seriously, I love weddings and I love being a bridesmaid. It’s so great to be able to be a part of a dear friend’s most special day.

Katie and Andrew have a heartwarming and very romantic story. They actually met through a friend, but were “cyber dating” for several months until they actually got to see each other. Andrew is from England and Katie is from Seattle, so the distance was quite drastic. However, even though they were 3,000 miles and 8 time zones apart, they beat the odds and fell in love. They couldn’t be more perfect for each other and I couldn’t be happier for them!

A Weekend in Salt Lake

This weekend I got to go to Salt Lake and visit some family and friends. My Nana and her husband, David, recently moved to Salt Lake, so it's always fun to go and stay with them.

On Friday, I spent the day with my best friend, Ali. We went shopping and then out to lunch with her mom. The mall we went to in Salt Lake was celebrating the grand opening of Utah's first Crate and Barrel as well as the state's first H&M. Let's just say it was a MAD HOUSE. The line just to get into H&M was wrapped around the entire building. It was nuts. And I have a picture to prove it.

On Saturday, I went to The Gateway with my cousin Becca and friend Leanna. Even though it was freezing cold and snowing, we still had a great time!

Then later that night I went to a hockey game. It was my first. I had heard there are generally lots of intense fights, but I saw only mild violence, which was extremely disappointing.

On Sunday my cousins came over to my Nana's condo and we had a lovely dinner. I'm convinced I have the best family in the world.

That night I slept over at my cousin Christina's apartment and then went to BYU campus with her in the morning. It was so fun to be back on campus, but also a little weird. I really enjoyed seeing some friends and I also got to visit with some old professors. One of my professors invited me to speak in her class. I was really nervous and I hope that I gave them some good advice. It feels really weird to speak in front of a class, as a professional, but I could get used to it.

It was a fun trip and good break from work/regular life. Can I just say that paid vacation is the best concept ever? Well, it is.

This weekend I was reminded how important good friends and family are and how lucky I am to have both of those blessings. I know my family will always be there for me and will help me see the good in myself as well as in others.

Haunted by Halloween

I’m a little behind on blogging, so I apologize. The past week has been a blur. In a good way.

As I’ve mentioned before, Halloween is one of my favorite holidays.

The funny thing is that I hate scary things. Movies such as The Grudge and The Ring, which I haven’t watched in at least 6 years, still haunt me. Nevertheless, I love Halloween. It must be the combination of fall weather, dressing up, pumpkins and parties.

This Halloween, some friends put on a full-blown production of a party, which I hear they do every year. It was a fright feast and everyone was supposed to come dressed in “freakish formals” and bring a cinderblock. When we arrived at their house, they had the whole place decked out and each of the girls who live in the host house were dressed as different types of scary people: zombies, mad scientists, witches, etc. They gave us tickets, took our cinderblocks at the door and then proceeded to make us stand in the freezing cold for almost an hour. (I’ll admit that this totally added to the mood) They periodically came outside to show us something creepy or say something creepy, all scripted. Once we finally got inside, their house was transformed into a mad scientist’s lab. All around us were cobwebs, rats (fake ones), spiders (also fake), mad science experiments (very real), creepy animals masks, etc. They had even constructed tables out of wooden crates and had us sit on the cinderblocks we brought. The ambiance was perfect.

We ate dinner and then the hosts came back out and had a scripted science experiment planned and made us all take pills (vitamin c). After that, we played a game with our cinderblocks, had a bonfire and ended with a dance party. It was pretty intense and really, really fun. These gals are some intense party planners.

I went to the event as a dead bride and my roommates helped me make some fake wounds and have scary make up. I’ve never had to dress scary before, but it was actually really fun!

Six Months Ago...

It's a murder mystery!

Last year I hosted my first-ever murder mystery dinner. It was so much fun, I decided to make it a tradition!

This weekend, my good friend Emily and I hosted a Mardi Gras themed murder mystery dinner.

I even made gumbo! It was my first try and thanks to my mom's handy-dandy Crock-Pot, it turned out pretty well.

Emily and Katherine have the cutest condo and the roof has an awesome view of downtown! Can you spot the Space Needle?

How about the murderer? Yeah, us either...
It was a ton of fun and everyone who came got really into their characters, which always makes things better.

As I mentioned above, nobody guessed the murderer right. The people who make these games are just too tricky!
Nevertheless, if you’re never hosted or been to a murder mystery dinner, I highly suggest changing that. HAPPY HALLOWEEN!

Forget Me Not

You know what they say: "Don't compare yourself to anyone but you." That's one of those things that's easier said than done.

How often do we meet someone and automatically start comparing our skills, body, physical features and clothing to theirs? Probably far too often. For me, it's usually subconscious. I think that's the scariest part of all.

How many times in conversation do you or someone you're talking to refer to another person by a physical trait? For instance: "What about that one girl?"
"Who?"
"You know, the [insert: pretty/nerdy/tall/short/skinny/chubby/red head/blonde] girl."

I'm definitely guilty of this and I'm sure we all are. How do you think the person you're talking about feels? Wouldn't you rather someone refer to you as the smart or kind or patient or funny girl?

The world is focused on outward appearances, but the Lord focuses on the heart.

I'm going to try harder to not compare myself to others, but to remember my divine worth. I once heard that every morning when you look in the mirror you should say three nice things about yourself. That might sound dumb, but if you haven't tried it before I dare you to. It works.

Everybody is different. We should celebrate those differences, because they make us beautiful, special, interesting and unique.

Why I Love Fall

There are so many things I love about Fall, but I've narrowed it down to my top 5 favorite things.

1. Fall Wardrobe
As one of my roommates said, "I love Fall, because my wardrobe gets a chance to shine."
What's not to love about scarves, light jackets, boots and cardigans?

2. Fall Leaves and Weather
Whenever I see a pile of leaves, I lose all self control and have to jump in them.

3. Halloween
Pumpkin Carving, Trick-or-Treating, Haunted Houses and Dress up. What a great holiday!

4. Corn Mazes
Nothing says fall like getting lost in miles of corn stocks.

5. Fall Baking
Pumpkin Pancakes, Pumpkin Bread, Pumpkin Pie, Carmel Apples, Apple Cider, and the list goes on and on.

So, who wants to have a party?

I Love You Like a Love Song Baby and I Keep Hitting Repeat

On Monday night I went to the Selena Gomez concert at the Puyallup Fair with my mom and sisters. Even though it took me more than twice as long to get there as it should have (darn rush hour traffic) and I had to pay $20 for parking, it was 100% worth it. Not only did we have some quality bonding time, the concert was AWESOME too. Sure, most of the concert attendees were under the age of 14 and female, but that didn’t even phase me. My sister Lindsey was totally bummed that Justin Bieber didn’t show up (they are dating, in case you live under a rock and didn’t know) and Leah couldn’t really see because of all the people standing on chairs (wild crowd!), but we still had a good time.

I really can’t explain why I love Disney Channel stars, but I just do. It probably has something to do with the fact I have extremely immature taste in movies and music. I prefer Disney Channel shows and movies like Annie and High School Musical over most other media options. I blame it on being the oldest child.

The concert ended earlier than we expected, so we had some time to explore and eat tons of food at the fair. We got fried chocolate covered bacon (DISGUSTING) and fried snickers (also disgusting, but in a good way) from a place called “Totally Fried.” They served fried frog legs, fried Kool Aid, fried bubble gum (I don’t get how that works), fried butter, fried mac and cheese, and well, I think you get the picture.

Since I got to the fair so late, we didn’t get to see everything. I hope I get a chance to go back before it ends!

My Best Friend's Wedding!

My best friend Ali got married in Salt Lake over Labor Day Weekend and I got to be a bridesmaid. I’m so glad I was able to be there and be a part of Ali and Brock’s special day. Brock, Ali’s husband, just happens to also be one of my good friends. He’s my neighbor and was one of my first friends I made after moving to Sammamish when I was 15. They’re perfect for each other-always have been and always will be. I’m so happy for them!

It was the most perfect day and the weather really couldn’t have been better. Everything came together beautifully and her reception was seriously one of the prettiest I’ve ever been to. But most importantly, I could tell how happy and in love Ali and Brock are. That’s what really matters, right?

Last weekend was the 2011 Baxter Family Reunion in SLC/Cache Valley. It's always so great to see all my cousins and we have way too much fun together.

This year we spent a day in BaxterLand/Cache Valley, went to see the musical,"South Pacific" in Logan, spent a day at Lagoon Amusement Park, and spent Sunday going to Music and the Spoken Word, church and brunch at the Little America Hotel in SLC. At brunch, a group of girls asked my aunt if my cousins and I are famous. I found this ironic, because last time we were at brunch, we ended up sitting by David Archuleta and Elizabeth Smart--two people who actually are famous.

It was a lovely weekend filled with lots of fun, room service, laughter, talking, shopping, eating, pictures and little sleep. I love my family and I'm so grateful that I was able to see them.

I keep telling my mom that I should’ve been in pageants when I was little. I'm very upset about it! I think I missed my calling.

This is why I’m addicted to TLC’s hit show “Toddlers & Tiaras.”

I think it's the combination of girliness, darling children, crazy mothers, drama, trailer parks, pink, ruffles, and sparkles (plus a hint of jealousy but also utter disgust) that draws me in.

Growing Up: The Good, the Bad and the Ugly

I've been doing a lot of growing up lately. There's something about being a college grad and having a real job in a big city that automatically makes you feel really mature. I was interviewing an intern candidate today at work and had to pinch myself. I was in her shoes just a few months ago. Am I really a PR professional? Do I really have a salary and a 401K? When did all this happen?!?

It’s funny to think that just three months ago, I had no idea where I was going to work or live, and now I have a great job (I recently got a promotion so I’ll be staying on long-term) and live in a really fun house in Seattle!

If there’s one thing I’ve learned, it’s never say never. (Yes, that was a Justin Bieber reference) Be open minded. You’ll never know what your potential is if you’re not willing to take risks and try new things.

Growing up is fun, but also hard! This summer has been a roller coaster, but I finally feel like I'm on solid ground. I moved into a house in Seattle that’s just a few blocks from the University of Washington and 10 minutes from my office. There are 9 rooms in the house (including a separate basement apartment). I love having roommates again!

Downhill Bike Race, Bungee Jumping & Broken Bones

This weekend we went to Mount Hood to watch my brother's downhill bike race. Watching his race was one of the most terrifying expereinces of my life. I watched too many grown men (or boys) crash and I was sure he was going to die...but he didn't! He did brake his wrist though, but he got first place in his category, so, according to him, it was worth it.

I went to the Pacific Northwest Mouse Meet yesterday. Nerdy? Totally! My friend's parents are really into Disney and go to this awesome Disney Expo every year. They are extremely mild fans compared to most of the people who were there.

I had NO idea that Disney had things like this. Here's the program/map:

The seven-hour event had several "celebrity" speakers and lots of fun and vintage Disney merchandise for sale/trade. I was amazed that so many people came and so many people love Disney so much. Two of the speakers actually worked with Walt Disney, which is pretty cool. They told some funny stories. It was fun to learn about Walt and his life and his dedication to making others happy. As the last speaker said, "Our product is happiness. In order to help people feel happy and live the Disney dream, we have to be happy too. That's why Disney is a great place to work. . .Everyone should learn from this lesson and not take life so seriously all the time. Focus on the things that matter most and focus on bringing happiness to others."

They showed this HILARIOUS video about the reopening of Star Tours.

I was also AMAZED by these lego recreations of Disneyland.

Although I felt like a TOTAL poser (yes, I just used the term "poser"), I actually learned a lot about Disney. There's no other corporation like it. Disney really is a community. The last speaker's name was Jack Lindquist. He was the first president of Disneyland and the cutest old man ever.

He was also the first director of PR for Disney. Being the PR nerd I am, it was really interesting to hear about some of the first campaigns and partnerships he launched for Disney. He's a smart man. I'm reading his book right now and know I'll learn a lot about PR and about life in general.

It was a long day and I kind of OD'ed on Disney, but I'm glad I got to go! It was an eye-opening experience for me. It was fun to be able to see how passionate people are about Disney. I don't think I'll be joining that community, but it was fun to be a part of it for a day.

Plus, I got an awesome swag bag! Jealous? You should be! HSM ROCKS!

My Favorite Places in Seattle

I really love Seattle. Sure, it rains 51% of the time, but it only takes one sunny day (like today) to remind me that I live in one of the most beautiful cities on earth.

Plus there are so many fun things to do in Seattle!

Here are a few of my favorite places/attractions (in no particular order):

10 Things I’ve Learned in the Professional World

I’ve learned more in the past month than I ever could’ve imagined. Although I’ve learned a lot about PR and the consumer tech industry, I’ve learned even more about leadership and life in general. I’m convinced that I work with some of the smartest, kindest and wisest people in the world.
Here are the top 10 lessons I’ve learned from them:
1. Enjoy and take advantage of the present.
Don’t always be thinking about what you have to do next. When you are in a meeting, be there 100% and give it all you’ve got.

2. People are always more important than deadlines.
Take interest in people’s lives and always genuinely ask how they are doing. Be attentive and perceptive to the needs of those around you and never be too busy for them.

3. Always make time for fun.
Everyone is busy, but everyone has time for a little fun whether it’s a creative brainstorm or an office party, a little fun can go a long way for morale.

4. Don’t throw people under the bus.
A good leader always supports and backs up the team’s decisions and is the first to take responsibility for mistakes.

5. Treat everyone equally.
Everyone is important to the team. Don’t discount someone’s idea because they don’t have a lot of experience.

6. Don’t be afraid to admit you don’t know something.
Be humble enough to ask for help and to admit you don’t have expertise in everything.

7. Trust others to do their own work and to do it well.
Successful delegation breeds successful businesses. Express your confidence in others often.

8. Always be one step ahead of potential problems.
Think through every tactic analytically. Aim to solve problems before they even become problems.

9. There is always a kind way to correct others.
Nobody’s perfect and everybody knows that. You aren’t doing anyone a favor when you pass up an opportunity to deliver constructive criticism.

10. Express gratitude verbally.
Communication is key (That is our industry after all). Let people know when you are impressed with their work and always thank them.

Have I helped anyone in need?
Have I cheered up the sad, or made someone feel glad?
If not I have failed indeed.

It's so easy to get caught up in life and forget about others. My life has changed a lot lately: new city, new job, new friends, new schedule, new commute...you get the picture.

I attend a New Testament class for my church every Tuesday. Last week, our instructor said something that has really stuck with me. She asked, "What are you doing to help build the kingdom?" Or in other words, what are you doing to help others?

I love my post-grad life in Seattle, but I've been feeling like something is missing. That night I realized what it is: I have been too selfish! Everyday I've been thinking about MY goals, MY time, MY projects, MY everything!!! The whole reason we are here on this earth is to help others. When we lose sight of this, we also lose our happiness (the true and lasting kind anyway).

Helping others doesn't have to mean building them a new house or spending your evenings feeding the poor. Those things are great, but there are other, smaller and more attainable ways we can help others.

It's the small things that end up making the biggest differences. I believe that by small and simple things, great things will come to pass. And I believe that if everyone thought a little more about others and a little less about themselves, we could change the world.

3. You know how to drive in the rain, but you don’t know how to drive in the sun (It’s true! Last week was really sunny and the traffic was awful).

4. “EMP looks like a burnt marshmallow on a smashed guitar” makes perfect sense to you (Gotta love Frank Gehry’s architecture).

5. You know where the Troll lives – and have sat on his lap.

6.You design Halloween costumes to fit under a raincoat.

7.You consider floating bridges a pain in the butt, not an engineering marvel (Especially when there’s a storm).

8. You consider swimming an indoor sport.

9. You can stand on any corner and see at least 6 Starbucks locations (There are 8 within walking distance of my office).

10.You feel guilty throwing an aluminum can in the trash (See explanation below).

People in Seattle are serious about recycling. The office I work in is also very serious about recycling. On my first day, I got a packet that explained office recycling procedures. There is even a page with pictures. Intense, right?

Sometimes if I’m not sure which bin my recycling should go in, I just take it home with me because I don't want to mess up. It’s too much pressure!

Anyway, if you haven't caught on, I'm living in the beautiful Northwest again and loving life! Seattle is one of the prettiest cities on earth. Although it rains 51% of the time, I love the fresh air, trees and lakes. If you've never been to Seattle, you should seriously consider making a trip up here--you won't regret it.

Katie's bridal shower!

I threw my first bridal shower today!!! My mom and I were so excited. We love parties and we love Katie, so it was just the perfect project for us. Naturally we started planning a few months ago and got a little too ambitious. What can I say...I'm an over-achiever. :) I figured I'd have TONS of free time to plan and prepare since I'd be at home and doing nothing. Well...the "tons of free time" and "home and doing nothing" didn't happen. Ha ha. I love working, but it eats up all my time!

Anyway, after a few late nights this week and a lot of work this morning, we pulled it off! I think everyone enjoyed themselves and Katie seemed very happy. We are so excited for her! She's getting married in LONDON in July and she got engaged in PARIS! Cool, right? Her fiancee is British and lives in London, so she'll be moving there. Talk about an awesome life adventure!

I could tell you all about the shower and what we did, but pictures tell the story a lot better than I could.

Although yesterday was my birthday, we started celebrating last weekend!

On Saturday night my family and I went to our favorite restaurant in Seattle, Saltys, for dinner. They have the best salmon in town, plus you can't beat their view!

Never underestimate how hard it is to get a normal picture with all my siblings.

Yesterday was my actual birthday and it was seriously a perfect day!
I woke up early for work and my mom made me a yummy breakfast before I left. My morning commute is usually pretty rough, but it wasn't bad yesterday. I did have to work all day, but honestly I LOVE PR so I didn't mind. My mom and dad drove into the city and took me out to lunch at a yummy and fancy sea food place downtown and left me with some beautiful flowers for my desk! Even though I had to work late, my coworkers surprised me with beautiful pink cupcakes before our last client call! I've only worked there a week, but they already know I love pink. Haha. It rained most of the day (typical for Seattle), but the sun came out right when I got out of work! When I got home, we had dinner with my fam, opened presents and relaxed. See--the perfect day! :)

After we watched (the highlights) of the wedding, we made princess tiaras. They weren't quite as pretty as Kate's was...but they did turn out pretty cute!

After taking millions of pictures, we decided to watch the Lifetime movie about William and Kate's relationship. Since we couldn't find it on TV, we had to hook my lap top up and listen to it through computer speakers. Fancy, I know. But the movie was great! I hope their relationship was/is really like that. Lifetime movies are the best. Hands down.

The night ended when our cute new bunny, Sparkles, decided to PEE on me. Bad bunny!

She looks so fluffy and innocent, but don't be fooled!

It's hard to not be able to forgive something as cute as our little bunny! Needless to say, I still love her and we are still friends.

Graduation!

Yep--that's right--I'm a COLLEGE GRAD! After 16 years of being a student, I'm done and now I get to be a working woman.

My graduation weekend was pretty surreal. I honestly still don't feel like I'm graduated and still have nightmares that I forgot to take one of my finals. But....it's true and I have pictures to prove it!

The first day of graduation was commencement, which is the big ceremony where the thousands of graduates across BYU all get together in the Marriott Center. At this event, no names were called or diplomas given, but we listened to some great speakers and got to see all our friends from other majors and colleges who were also graduating.

The second day of graduation was convocation. This is where I got my diploma! It was a smaller ceremony with just the Department of Communications. I really like it, because I knew everyone and it was half the size of my high school graduating class.

Along with my graduation came many celebrations including dinners at Brick Oven and La Jolla Grove, a party at SPARK and a high tea at The Grand America.

I have a diploma and my whole life ahead of me......now what??

Goodbye PRSSA

I've been a member of BYU's Chapter of the PR Student Society of America for the past four years. Last night was my last official PRSSA event! I have made so many great friends and have had so many great opportunities through my involvement in PRSSA.

This past year I was BYU's chapter president. I learned so much and am a better person because of this leadership opportunity. This year our chapter grew by about 60 percent. It's been great to see people get involved! I was lucky enough to have 8 wonderful and talented vice presidents who all helped make my job easier. We also have wonderfully supportive and involved faculty members.

I really love PRSSA. I'm going to miss it. A lot.

PRSSA helped me find my passion in PR. Through my involvement, I was able to get many internship opportunities and have gained skills in and outside of the classroom. I was also able to build life-long friendships.

Thanks to everyone's hard work and dedication, our chapter won some amazing awards this year.

Today I went to my last class at BYU....EVER! It's a weird, yet great feeling.

I can't believe that I'm going to graduate from COLLEGE next week. That is a huge deal. HUGE! I've loved being at BYU and am grateful for the things I've learned over the past four years. I'm really going to miss being a college student, but am very excited to start my career in public relations!

My life is full of uncertainty right now. It's going to be hard to leave BYU and all the friends I've made here, but I know that everything will work out. I'm grateful for my faith and for the knowledge I have that my Savior lives and loves me. Even though I'm not sure what's in my future, I know that as long as I stay close to the Lord, I have no reason to be afraid.

I made lemonade! Okay, not literally, but I did buy some at the store.

Today I was reminded that the Lord knows me better than I know myself. Sometimes challenges are put my way just so I can learn. Tonight was one of those nights.

I was in charge of an activity for church and let's just say it was a disaster before it even began.

Our activity was supposed to be a dance, then it was a murder mystery dinner, then finally a dinner dance. Well, when I showed up with the food, there were no tables, chairs, lights or speakers--oh and it was supposed to start in 2 minutes. Thanks to my level-headed bishop and a great committee member, we tracked down the right people to get us our tables and chairs. Then we had everyone eat dinner to buy us some time to figure out what to do next.

My next task was to find the right cords for our speaker system so we could have our dance. After hitting a brick wall (again, not literally) I had a great idea!! I decided we should make cards for children in the hospital in Provo. Luckily I have a lot of craft supplies, so my darling roommate brought my whole craft drawer up to the activity for me.

Tonight I learned that it doesn't help to blame others or to get upset when things don't work out as planned. You simply must make the most out of the situation you are in.

Even though things didn't go my way tonight, my church group ended up being able to help people and have fun at the same time!

With finals coming up at the end of next week and graduation approaching in just two weeks, I have a lot of school (and other) work to do.
Ironically, I've found a lot more free time to get obsessed with the following:

1. Pinterest

If you haven't heard about Pinterest, you are missing out! It is a new social networking site where classy people share beautiful and classy things with each other such as party ideas, beautiful food, awesome clothes, good products, etc. Needless to say, it consumes too many hours of my day. Yes, hours. I may have a slight addiction, but the first step to recovery is admitting you have a problem--right?
2. Crafts

I love making jewelry and enjoy creating beautiful things for others. I've been experimenting with new styles of earrings. Below are two of my favorite sets I've made:

Yeah, yeah-I know what you're thinking: "Workout videos are lame and never work." or "There's no way to get a hard workout from a video."

Well, that's not true. Try Jillian's Level 3 workout and I promise you'll be whistling a different tune. If you've watched The Biggest Loser, then you know Jillian is TV's toughest trainer. The workouts in these videos are just 22 minutes long, but they work every part of your body. I've been doing her workouts for 26 days now and feel GREAT! It only costs $8.99 on Amazon.com. Carl Bloch Exhibit at BYU

Last night I went to see the Carl Bloch exhibit at BYU's Museum of Art. It was amazing--probably the best exhibit I've been to in years.

As soon as I walked into the exhibit, I was awestruck. Carl Bloch painted eight alter pieces and BYU has five of them. They came from Denmark and Sweden and it was the first time the pieces have been moved since the 1800s. They are incredible and the paintings are seriously huge.

Here are two of my favorite pieces from the exhibit:

I love this painting. So many times when artists depict the Atonement, they show the moment when the Savior is in agony. Carl Bloch decided to show the moment when an angel came down to comfort Him. To me, this painting reminds me that even in my lowest times, the Savior knows how I'm feeling and will always be there to comfort me.

I also love this painting of the daughter of Jarius. Again, Carl Bloch uniquely chose to depict the moments before the Savior came to help them. You can see the agony on the mother's face and empathize with the situation. Then, if you look in the doorway, you can see Christ about to enter the room. To me, this painting reminds me that I need to have faith throughout my life: the good times and the bad. In hard times, it's easy to feel like the Lord has abandoned you, but the truth is that He will always be there for you. Sometimes He'll make you take a few steps in the dark, but then He'll be there to help, guide and comfort you.

The rest of the paintings were amazing as well. I knew that this exhibit would impact me, but I didn't realize how much. The past few weeks have been really stressful and honestly just bad. I know it's all about my attitude and that nobody can make me have a bad day but myself, but nonetheless, I've been feeling pretty crumby lately. Going to this exhibit last night was just what I needed. It was the perfect reminder that no matter what comes my way, as long as my focus is on the things that really matter, then I will find happiness. Looking at all the paintings of the Savior made things more real to me. It helped remind me of my testimony. It also helped remind me that I am a daughter of God and that Jesus Christ is my elder brother. I kept thinking about the words to the well-known hymn, "I Know that My Redeemer Lives." I know Christ suffered and died for me. I know He performed miracles in His day and still performs miracles today. I've been blessed to see many miracles in my life.

I stopped counting down the days until graduation, because it is getting a little too close and a little too real. But don't get me wrong, I'm excited to graduate. Graduating from college is a huge accomplishment and I feel so lucky to have been able to spend the last four years of my life at BYU. It's a great school. I've met so many amazing people and have made life-long friendships.

Remember this song? Yeah, it still makes me cry. (Partly because of my current situation, but also because it reminds me of 5th grade)

Watching "The Bachelor" is my guilty pleasure. I can't help but be entertained by all the crazy girls on that show. This season there were some seriously PSYCHO girls (like Michelle Money from SLC) and there were also some girls I really liked! But speaking of Michelle Money, you have to take 4 minutes to watch her interview on "Ellen." It's hilarious.

Turns out Michelle was right, Emily did win. Aside from the fact that I don't personally like Brad, it was a pretty good season so I decided that it would be fun to have a finale party!

Last week I was touched when a girl in the PR program told me that I'm her role model. It also got me thinking about my role models. There are so many people who have helped shape me into the person I am today. I have been blessed with so many amazing friends and family members who constantly set a good example for me.

1. My Parents: Brooke and Rob Lytle
I love my parents. They are so kind, patient, fun, smart, understanding, talented, reliable and selfless. The best part about them is that I know they love me and want the very best for me. I talk to my parents at least 6 times a day. Some people think that's ridiculous, but I think it's awesome. My parents are my best friends--they always have been and always will be. They love each other and love our family more than anything else. I know they would do anything for me. My parents help me accomplish my goals and see my potential. When I mess up, they never make me feel stupid. They have the best advice and strong testimonies. I love them with all my heart.

2. My Nana: Carolyn Baxter Chapman
I have the best nana in the world. One email, note or text message from her can make my day! She is so in tune with the spirit and always know exactly what I need to hear. She was sick for a few months earlier this year. I was so impressed with the way my nana handled this trial. She was determined to get better and now she is! I couldn't be happier. When I was 8, my nana taught me her favorite scripture that is now my favorite too: Proverbs 3:5-6. It states, "Trust in the Lord will all thine heart; lean not unto thine own understanding. In all thy ways, acknowledge Him, and He will direct thy paths." She truly lives by the words in this scripture.

3. My Cousins: Caroline and Joe Hood

Not only are they the most beautiful couple I've ever seen, they are also the nicest. Caroline is one of my favorite cousins. She has accomplished so much in her life and she isn't even 27 yet! I loved having her at BYU with me. She always makes me feel so good about myself. All the boys always loved Caroline, but she held out until she found a man she was head-over-heels in love with. Caroline and Joe are perfect for each other. I have never seen a happier couple. I hope that I can find someone who loves me as much as Joe loves Caroline. Their love in contagious! When you are around them, you can't help but smile. You have to watch their wedding video I posted below in order to really understand what I mean.

4. Taylor Swift
I love Taylor Swift. Her music is great and always makes me happy, plus she is probably the most moral and kind celebrity ever. She seems to have a lot of trouble with men, but that's the only reason you ever see her in the headlines. I'm so impressed with her! She's younger than me and look how much she's been able to accomplish! She has 3 successful CDs and does it without swearing in any of her songs. I love that about her! So, yes, make fun of my all you want, but I think Taylor Swift is a great role model.

Unselfish Service

Over the past few weeks, I've found myself feeling a little less happy than usual. However, this week, I met two of the most amazing people at the 2011 BYU President's Leadership Council meetings, who helped put me back on the right track. This older couple reminded me of something vitally important--they reminded me that the only way to find true happiness is by serving others. As I've been trying harder to go out of my way to help the people around me, I've found that I can be happy no matter what is going on in my personal life. No burden or worry can't be overcome by unselfish service.

First of all, can I just say that I CANNOT believe it is already MARCH?! I am so excited. I can see spring in the air. The weather today has been just lovely: 50 degrees and sunny with just a slight breeze. I love springtime for many reasons, but mainly for the color that comes back to the grass, trees, flowers and other plants.

I feel it is necessary for me to dedicate the rest of this blog post to my friend, Justin Bieber. Even though he recently cut his hair and consequently lost 80,000 followers on Twitter, I still think he's great and I still follow him. Plus, it's his BIRTHDAY! Happy birthday JB!

I just have to say that I am not one of those "Justin Bieber freaks." I didn't even know who he was a few months ago. My little sisters had to introduce me. But, I went to the movie with some friends a few weeks ago and just have to say that he won me over--100%!! I don't care who you are, if you haven't seen it, you need to. It is really an inspirational film. He came from a very modest single-parent home and established himself all on his own by posting videos on YouTube. It was really cool to see his story and even cooler to see how well he treats his family, his friends, his team and his fans. As I said, I follow him on Twitter and he always retweets his fans and tweets at them. I don't know many (or any) other celebrities who do that. Plus, let's be honest, his music is catchy. Don't fight it. And he's dating Selena Gomez and she's awesome.

The job hunt

Since you are reading my blog, you are clearly aware that I'm graduating in 52 days.

Don't get me wrong, I'm excited to graduate, but the more I think about it, the more I realize how bitter-sweet this point in my life is. Where am I going to be living in 53 days? Who knows!?! This is exciting, but scary too. I'm really looking forward to not having to write four research papers in one weekend (sounds fun, right?) and I'm even more excited to be done with Accounting 200, but I'm not 100% excited about having to be a grown up.

I also never realized how big of a time commitment job hunting is. It's truly crazy how many hours of my week are dedicated to applying for jobs: researching companies, writing cover letters, editing and re-editing my resume, finding my best writing samples, sending a lot of emails, interviewing, etc. It's a full-time job all on its own. I applied for tons of jobs this weekend! One of them is even in London. Who knows, London could be fun. I did, however, stay away from applying for any jobs in Mumbai (surprisingly there are some entry-level PR openings there right now...).

Once I get in the "job hunting zone," I just can't get out of it! It's addicting. Truly. It is. I think the main reason for this addiction is that it is always a challenge. I love challenges and due to the poor economy and current lack of job openings, finding an awesome first job may just be the biggest challenge I've faced so far in my life! But I know I'll find a great place to work. I also know that patience is a virtue...

I'm graduating in 56 days and am coming to the realization that I have so much more to do before I'm no longer a college student/no longer living the Provo dream.

At the beginning of the year, I made a list of things I wanted to do before leaving Provo, a Provo Bucket List if you will. I've accomplished a few of the items, but have a long way to go. I figured if I post this on my blog, maybe you can help me be accountable and help me finish my list!

Where dreams come true...

My best friend Ali and I spent the long weekend at Disneyland! Our adventure began when we almost missed our plane from SLC because we had to get some caramel apple cider. For some reason we thought it would be a good idea to stay in a two-star hotel that was actually a motel. It was pretty ghetto, fully equipped with sandpaper sheets and a leaky heater. No, it really wasn't that bad, but weather was a little psycho. It stormed a lot, but then some of the time it was hot and sunny. Very strange.

But the thing is that Disneyland is so magical that none of those things even mattered. They didn't even phase us.

On our first day we spent all 12 hours solely in the Disneyland park. We fell in LOVE with Space Mountain, had the best corn dog of my entire life, sang at the top of our lungs on "It's a Small World," and took lots of pictures.

On our second day we got to the park earlier and spent the day running between Disneyland and California Adventure. We rode California Screamin' (the giant roller coaster) 4 times and Tower of Terror 3 times. Needless to say, I'm not sure if our brains will ever recover from the whiplash. I also learned that I'm a good screamer. I didn't know I had that in me.

They also have a new Toy Story ride at California Adventure. It was sooooo much fun.

It started pouring rain at night, but we stuck it out and stayed for World of Color. It's a new water show at California Adventure. It was seriously amazing. They somehow project clips from all the best Disney movies onto water. I can't even do it justice. I was so impressed. It was 100% magical.

On our last day we hit all the highlights plus we ate lunch at Ariel's Grotto. It's character dining so we got to eat with all the Disney princesses. Amazing. Best day of my life.

We had a blast. It was quite the adventure. We definitely had our favorite rides though and rode them at least 5 times each. Check out some of the pictures that were taken of us on these rides:

This morning we woke up at the awesome hour of 3:45. Sweet. Then we caught a shuttle to the airport. The funny thing is that the driver took us to the WRONG airport. Imagine my HORROR when I woke up to see we were at LAX instead of Long Beach. Not cool. Don't worry, our driver was CRAZY and got us back to Long Beach in about 12 minutes. We almost died. That shuttle ride was scarier than any of the rides at Disneyland, but we didn't miss our flight and now we are safe and sound at home. What a great weekend!

Meg Johnson--Just Keep Rollin'

Tonight I listened to the most amazing motivational speaker, Meg Johnson. She's from Ogden, Utah is the most remarkable and inspirational person I have ever met. When she was 22, she broke her neck on a hike and is now paralyzed and has been for seven years. Since then, she founded the Miss Wheelchair Utah Pageant, has written many books and inspirational tapes, and volunteers every week at the hospital where she was treated. Her motto is "When life gets too hard to stand, just keep rollin'."

This is Meg.

In her speech, she taught me many things, but the most important thing I learned is the importance of looking away from my self and focusing on others. We are here on this earth not only to help ourselves progress and learn, but also to help others. There are people out there who can only be touched by you. I know this is true.

Here are some quotes from her speech that stuck out to me:

-Keep the commandments. The most important commandment is the one that you have the most difficulty keeping.

-Miracles happen not because God is trying to prove something to you or to increase your faith, but because you already had that faith and acted on it.

-Gratitude from the mouth is "thank you" and gratitude from the heart is "I love you."

-If you look for ways to love others and love every part of your life, you can go from the saddest sad to the happiest happy.

-I'd rather be wrong and do something right than be right and miss my chance.

-Your legacy will be written in the hearts of those you serve.

-When you feel your weakest, serve others and the Lord will help you feel strong.

-You'll find when you're lifting others, you are the strongest.

-It doesn't matter how hard it rains, you won't feel it if you're picking up others who are in puddles.

-Remember who you are and remind yourself of this truth every morning. There isn't a better way to start your day.

Ettiquette: A dying art form.

What has happened to people these days? It's sad to see that less and less people know how to be polite and how to have good manners.

I'm reading a book by Tim Gunn right now and he addresses this very issue. Being polite used to be in style when people like Audrey Hepburn and Frank Sinatra were famous, but now it seems to be uncool thanks to celebrities who are notoriously rude (and crude) like Lady Gaga.

Today, people seem to be too "busy" to be polite and feel that showing gratitude is inconvenient. No matter how busy you are, it doesn't take any extra time to say "thank you" to someone who holds a door open for you or to smile at people you pass on the street.

I'm always impressed when people have good manners and clearly understand the importance of etiquette and gratitude. Thanks to the guys out there who still open car doors, give girls flowers and are openly grateful for the people in their lives. Thanks to the girls who always give sincere compliments and make others feel welcome. I feel lucky to say that I have so many friends who do these things.

A few weeks ago, we had about 30 people over for Sunday dinner. A couple of guys who were at the dinner wrote us a sweet thank you note a few days after we had them over. It probably took them 2 minutes to write, but it made my day. We need more people like them in the world. Thanks guys!

Helping with Project HOPE in Dallas

Last week I, along with a few other PR students at BYU and our lab director, went to Dallas to help with a national nonprofit called Project HOPE. I'm from Texas originally, so I loved being in my home state.

We got a grant from our college to go and help out with Project HOPE's health education initiative called HABITS for Life. They partnered with the NFL Players Association, the Living Heart Foundation, Johnson & Johnson and other organizations to make this happen. HABITS for Life aims to educate people (particularly Latinos and African Americans) on ways they can be healthier. Their three key messages are: (1) Drink 8 cups of water, (2) Exercise 60 minutes and (3) Eat 5 servings of fruits and veggies every day.

Project HOPE has a state-of-the-art mobile health clinic that they drive around to the different health education events. It has some amazing technology and video conferencing capabilities so a doctor who is in D.C. can diagnose a patient who is in Dallas almost instantly.

The motto of Project HOPE is to help people help themselves. I honestly saw some lives changed last week and I feel lucky to have taken a small part in their success.

So what did I do? Well, PR! I did a lot of media pitching, I mean a LOT. It was tough because we are competing with the Super Bowl, but we still got some good coverage on several radio stations, Dallas Morning News and Fox News. I was also in charge of social media (Twitter & Facebook). Since we couldn't really rely on traditional media to get our coverage, we did some grassroots PR as well.

During the actual events, I helped at one of the health education booths and taught people about healthy eating. It was great to be able to talk to all the people who came and to help them learn how to incorporate healthy habits into their lives.

Now, we didn't leave Texas without having a little fun! Although we didn't eat any Blue Bell Ice cream, we did have a lot of good food. I introduced everyone to my favorite Mexican restaurant in TX and Brian, a broadcast student who was filming a documentary about our experience, introduced us to Babe's, a family-style southern comfort food mecca. I was very excited to see that our hotel had a TEXAS SHAPED WAFFLE IRON! Way to go Texas pride! Even though we didn't get to go to the Super Bowl, we still went to see the stadium. It's huge and my pictures were all blurry. The last day we were in Dallas, we went to see where JFK was killed. They have an "x" in the middle of the road that marks the exact spot where JFK was shot. We ran into the middle of the road to take a picture by it. I'm glad we didn't get hit. Then we went to The Sixth Floor Museum and learned all about JFK, the assassination and conspiracy theories. It kind of made my head hurt, but I loved every second of it.

Bottom line: I learned a lot and also had a lot of fun!

Today is my mom's birthday! I'm convinced that Brooke Lytle is the greatest mom in the world.

Here's why:

No matter how many dumb things I do, she still loves me.
She will drop anything to help me or just to talk to me.
She makes me feel like I can do anything and helps me accomplish my dreams.
My mom is always happy and taught me the power of positivity.
She is so selfless and taught me the importance of serving others.
She's FUN!
She lets me make my own decisions (and mistakes) but is always there to comfort and support me.
She taught me the importance and power of prayer and faith. With the Lord, anything is possible.
She's my best friend!

I love this video. Mothers are so important. My mom has made the biggest impact on my life. She's my best friend and my role model. Thanks for everything you do for me, mom! I love you and hope you have a very happy birthday!

Condoleezza Rice comes to BYU!

Condoleezza Rice is one of my heroes. In case you don't know who she is, Condoleezza was the U.S. Secretary of State from 2005-2009 in the Bush Administration. She came and spoke at a university forum on BYU campus today. When I heard she was coming to campus, I couldn't have been more excited! We had pretty good seats, so I could see her pretty well. I was impressed with the way she carries herself. She is also very stylish. Check out her beautiful suit with leopard print cuffs in the picture below!

Her speech was powerful, inspirational and diplomatic. It exceeded my expectations.

Here are some highlights from her address:

"Today's headlines and history are rarely the same."

"Every man, woman and child deserves to live in freedom and the United States is the only country that advocates this."

"As educated people, you have a responsibility to be optimistic," she said. "If you can't be optimistic given all the opportunities you have, then who can be?"

"It doesn't matter where you came from, it only matters where you are going."

She talked about the importance of finding your passion. She said, "Worlds open up to you when you find your passion." She told us that when she first got to college she was a piano performance major. After her second year, she went to a music festival and realized there were children who could sightread music that would take her an entire year to learn. Needless to say, she changed her major. She finally chose a major when she found that her passion was international politics. This story really means a lot to me. Look how successful Condoleezza is! She's been successful, because politics is her passion.

She also talked about the importance of family and said that she respects the LDS church's stance on the family. "Family is the center of my life," she said. Her hero is her great grandfather who was the first in her family to attend college. He valued education and taught her father who, in turn, taught Condoleezza that nothing can replace a good education. She said that she's been able to accomplish her dreams because of her extremely supportive family. Growing up in segregated Alabama, she couldn't even go into most restaurants, but her family helped her to see that she could be the president of the United States if she wanted to.

This is the book she recently wrote about her life, her family and her journey.

I feel so grateful to have been able to hear her speak today. Putting my political beliefs aside, I think everyone can agree that Condoleezza Rice is an amazing woman. I feel privileged that I was able to hear her speak today at my school. I love BYU and I love being an American!
